May is right in the middle of spring and summer, there is an abundance of fresh and crisp greens to vibrant colourful fruit. This abundance of fruit and vegetables will enhance your plate. Make the most of the seasonal produce as right now they will taste amazing. Also, preserve some of the may freshes by pickling radishes or making some elderflower wine.

To keep some of your produce fresh, put your asparagus or spring onions in a glass with some water in the fridge. This keeps the your greens crunchie and fresh.
Pickled radishes
1 bunch of radishes around 20 radishes
½ tsp whole mustard seeds
1 cup cider vinegar
1 cup water
2 cloves of garlic sliced thinly
1 tbsp sugar
Wash and chop the ends of your radishes, then slice them thinly.
In a sterilised jar place the radishes, garlic, and mustard seeds.
In a pot put the water, cider vinegar, and sugar. then bring to a boil until the sugar has dissolved.
Pour the mixture into the jar and fasten the lid.

Set the jar to the side until at room temperature, for the best flavour wait until the next day before eating.
Store for up to three months, once opened eat within a week.
